Spring on day 2

It is almost, uh, it is 10 AM EDT as I type. Up once earlier, I looked out the window to see yesterday’s snow is not melting yet. No worry  because the ambient temperature might go up to 40° Fahrenheit this afternoon.

Half of Spring is ready while the other half catches up. Like me. Catching up. On days like this I want food that is easy to heat up because I don’t want my attention taken away from whatever task I’m doing. 

Cooking is a whole other task block. Easy food when busy is good planning. Lentil soup with chunky vegetables and a tall glass of ice tea is a good busy day menu. 

Making soup requires prepping the veggies. Without realizing it, I’ve been brainwashed to feel unpeeled carrots are bad. They are not. Peeling carrots is not required, especially when they are cut up and boiled in soup. 

My busy day will start with making lentil soup. 

Being busy requires prep work as well.

  1. I haven't been cooking much but a pot of soup sounds good. I made cornbread....I'll bring that along!

  4. Woke up this AM to 29°. Too cold. I do like cooking and making soups is one of my faves. You can never go wrong with soup. Have a nice day and thank you for stopping by my blog.

  7. being busy always requires a plan and a willingness to be busy. our snow is all gone, and our temperatures have been good, we were even in the 70's during the day saturday and sunday!!

  8. I hate taking time out of my day to cook so it's a good thing that the Resident Chef is happy to take on that chore. Back when he was still working and I was the cook, I'd remember that we needed to eat about an hour before supper was to be on the table. Not conducive to anything beyond something really quick because everything else was frozen rock solid.
