Thinking on a Saturday Morning in January With No Cheese in the Fridge

It can be rough when there's no cold food in the fridge to grab and eat without prep, no cheese, no bread, no leftovers, no spoonful of peanut butter (because you read peanuts are better than peanut butter). Raw vegetables and fruit don't count because they may need peeling, and for sure washing.

I'm sitting here with now cold coffee, barely getting my sense of taste and smell back, thinking about what it is going to take for me to cook breakfast. What does a person do without toast at the first meal of the day? Then I think about the people suffering with starvation having no bread at all any day. Well, if they were here, then they would miss having toasts as well.

This is what is going to happen. I will make latkes with shredded red potato and zucchini. I can't deal with onion at the moment. I am confident that I will cook because I am that hungry. Cereal is not going to cut it this late in the morning. Besides, I'm in need of some greasy and crisp food I can have with ketchup. No doubt there will be a latke photo added later.

Until then, clearing out a cabinet to organize it efficiently, I found a few things from days gone by. There was a time when I was near obessessed with vintage lamps, especially ceiling fixtures. I thought they make nice hanging candle holders. What the one in the photo above did make, is to fill a nice space in the donation box I dropped off at a thrift store yesterday.

Time to cook

How did your day start out?

Shredded Red Potato & Zucchini

Latke in corn oil

Latke, juice and ketchup

One medium pototo and half small zucchini shredded
About 2 tablespons of flour
About 1/8th bit of baking powder
Black pepper
One large egg
Mix
Add to medium heated fry pan
Tamp down mix to be evenly cooked
Fry in corn oil until brown  
Drain oil on paper towels
Makes 5 

Options: diced small onion, spices, parsley, cheese

    I enjoyed reading you blog today.

    I will miss the gallon sized milk glass vase I donated. In all the years I had it, I used it once. It is so large, it overwhelms my small apartment. I hope it finds a new home with high ceilings.

    The latkes turned out good.
    I'm surprised because is has been a while since I made the. I think the corn oil, that doesn't smoke like olive oil, is the best way to go.

    Latkes are actually easy to make. Its the shredding by hand that's boring.

  11. The latkes look fabulous. It's snowing in New York and I'm going to do crockpot cooking in the morning. I think I'll start the morning with coffee and French toast, but now I've got latkes stuck in my mind.

    Thankfully, I have food in the pantry. I just didn't have the energy to cook. I wanted an easy meal. The easiest and best was the latkes. I couldn't face plain scrambled eggs or oatmeal.
    With snow on the ground tonight and into the day, I think oatmeal will be the best meal because I have to go out to move the car for the snow plow. lol

  17. No cheese? I can't imagine that because it's a definite staple in our house and I know if there wasn't any to be had I would immediately be craving it. I think, if Resident Chef wasn't doing the cooking, I would mostly live on grilled cheese sandwiches.

    Big grilled cheese fan here as well.
    I cut down after some folks told me their cardio diet folks say no to the grilled cheese because of too much fat. I think a cheese sandwich on toast left in oven to melt the cheese is healthier than butter in fry pan.
