Walnuts, Kielbasa & Spinach


  1. Sliced turkey kielbasa, brown in fry pan with a fourth cup of walnut pieces
  2. Add a cup of washed fresh spinach
  3. Mix in a tablespoon of honey mustard and teriyaki sauce
  4. Stir while kielbasa heats up, about 5 minutes on medium heat
  5. Options: Serve over rice pilaf or a baked potato
Next time I'll add feta cheese, and maybe a drizzle of white wine. If I use collard greens or kale, then I'll add a bit of apple cider vinegar, honey, and orange zest into the sauce.

I had it for dinner last night. The walnuts aren't as hard after cooking them a bit. My sense of taste is returning slowly. For what it's worth, I think it tasted good.

    To get my greens, I do eat some of the spinach before cooking the rest. :)

    Feta on just about anyting is fantastic. One year, I rarely had a meal with feta cheese. I think not using a lot of salt makes it so good to have.

  5. mmmm - yum! We have everything except the walnuts on hand so might have to share this recipe with RC and see what he thinks. Adding feta cheese would just make it that much better (doesn't feta make everything better?)

    It makes it easier to add nuts to a menu by sauteing and then in wilting the greens. They are still crunchy, but not as much.
    Yes, feta cheese makes everything better, even a jelly sandwich. :)

    Yes, over pasta would be really good. Using bow pasta, you can call it buttons and bows. :)

  13. Easy is preferred here as well, but turkey kielbasi would not be enjoyed by my husband who doesn't like anything chicken or turkey except for cutlets, pieces, thighs or the bird themselves. That said, this meal looked delicious and I could probably sneak it into a future meal rotation.
