Mashed Brussel Sprouts' Sandwich
Mashed Brussel Sprout Sandwich |
1/2 Cup boiled Brussel sprouts
mashed with a fork
1 Tablespoon sweet relish
1/8 Teaspoon garlic powder
1/8 Teaspoon onion powder
2 Tablespoons Mayo
Mix ingredients well
Spread on bread as you would tuna or egg salad
Suggestions:
Fancy it up with a slice of Swiss Cheese, thin onion and/or meat
Use red pepper relish instead of sweet green pickle relish
Salt & pepper to taste
The sandwich in the photo is all I had left of my mashed Brussel sprout sandwich on day 3 of my Mental Health week, by the time I thought to take a photo. Sorry. 🙄

Major PTSD obstacles faced and conconquered today. When that happens, I feel luck as well as grateful.
The pollen count has been high in this area of Vermont north of Middlebury. Thick green tree pollen was coating everything. The rain last night helped wash it away. I sat outdoors this morning anyway, and almost fell asleep!
Tomorrow is bow pasta salad with cocktail size shrimp. Forecast rain means indoors working on fabric doll.
I never would have thought to make a sandwich of brussel sprouts but now you have me intrigued.

ReplyDeleteCold salads are on my mind more as summer nears. I looked online to find other variations. There are good looking Brussel sprout recipes out there.
So many of my food photos are like that! I forget to take the pic till partly eaten! The title of this didn't make me hungry but when I saw how you put it together and the other flavors, it looked pretty good! Three cheers on the challenges!

We are not huge Brussel sprout fans. In a sandwich might be a bite too far but I am open to it.

ReplyDeleteMashed cauliflower works the same. I tried it today. Need to drain it well so it isn't mushy.
Oh, this is interesting. I have Brussel sprouts in my fridge right now. Thanks for the suggestion. It sounds delicious!

I like sprouts but would not have thought to put them on bread.
