An Epiphany

Epiphany ~ An illuminating grasp of reality

At least that's the definition I am working with thanks to help from Merriam-Webster.

Here's the story...

In January from one of my lists or suggestions, I plan to cook weekly  from a recipe. Being of solid Irish descent, a potato recipe catches my attention from an article in, Country Home, Winter 2022, Dreamy Creamy Potato Casserole, (page 89). 

The little eat right voice from the dietician days tells me that's a lot of carbs. I hear a memory of a doctor telling me no cream soups. I tell myself that balance is not the word no! I will adjust great recipes to fit my diet menu for a balance of protein and carbohydrates. 

Okay. That's settled. I begin to think about subsitutes. Right then the epiphany happens! I can write my own cookbook! Create my own recipes!

All I wanted was an easy recipe. Now I'm going to rely on a so so cook (moi) to create good food?

This is going to be hilarious.

  1. I think making your own recipes is a good idea. I've never been one to measure precisely. A little of this, a little of that, and we learn to cook better, it's our own dish. Are you on a strict diet, I didn't realize that?

    Creating recipes requires measuring, will be a challenge.
    No a strict diet here. High cholesterol puts demands on my menu. Add food allergies to that, and it makes for a varied diet.

  6. I can't wait to hear how it goes! I know you'll find wonderful substitutions. (And remember -- there are different types of carbs, too. I think oatmeal is one of the better ones because of the fiber!)

  7. I am all about cooking easy....with as least amount of ingredients! HAHA...and I really prefer a one pot meal (crockpot). Course, there again, I try not to cook that often....lol

  8. Yes, substitute ingredients to create your own delicious recipes!
    Shouldn't tell you, but I made cream of potato soup with cheese and bacon yesterday. I sent a container home to son/dil so we didn't eat it all, but it was kinda decadent.

    I haven't turned on the stove yet and already I'm torn between whether to use white or sweet potato.
    The Country Home recipe, I plan to only leave out the cream soup. It sounds like too good a cassarole to change anything else.

    Potato soup with bacon is a favorite that I limit myself to have once or twice a year.
    It and homemade French onion soup with a glob of cheese and garlic bread and corn chowder with bacon are the best winter soups I know.

  14. I like what Canadian chef Michael Smith says about recipes - they are just suggestions. Adjusting them to fit your own desires and needs is best. Good luck with your recipe book!

    Chef Michael is a wise man.

    Online search results say 70 to over 100 recipes for a cookbook. I'm thinking 50ish for my diet journey themed cookbook.

  16. What fun you will have loosening the shackles of a recipe! Those who I have cooked for say I never make the same dish twice ;o) It's always an adventure but I haven't poisoned anyone yet. Have fun x

    Reducing the preparation time is a challenge. A do this to that to fit with this thing. Testing out how to prepare is fun though.
