First Try for Red Pepper Relish

~ Dice veggies:
Red pepper
Celery stalk
Cucumber remove seeds
Garlic clove
Roma tomato
~ Add in 2 quart sauce pan
Olive oil 2 Tablespoons
Sugar 2 T
Apple cider vinegar 1/4 cup
~ Simmer ingredients until pepper is soft
~ Cool
~ Store sealed in fridge 2-3 days

Results:
Tastes too sweet
Needs less sugar or else use honey, and add more vinegar

Summary:
Glorified sauted veggies
Will be good with turkey kielbasa
Buy a good red pepper relish unless making enough to can

PS
The overcast sky here in northwestern Vermont has that dusty tint of a smokey sky.

Prayers for Canada and Nova Scotia

  1. I hate those bad fires in Canada and Nova Scotia! I'm keeping everyone in my prayers. Your veggies look good. I would probably want to add a hot pepper. But I always made salsa to can in the summer time.

  2. Good eats! when we used to have a large veggie garden these relishes were so good home canned too-enjoy

  3. Sometimes it is better to buy the desired item than to make it. It is worth a try though as I see it!

  4. That looks so good! I like the idea of making it in a small quantity like that especially here where we have no means of cold storage unless we put it in the fridge where there's limited extra space.

  5. Diane,
A few hot pepper flakes is a tasty thought. Something is needed to elevate the flavors.

End of the garden relish my mother made is a favorite.

  7. Marie,
Relish is so easy, finding the right mix is worth the effort. Meanwhile, I will buy a jar. lol

  8. Maryanne,
What I made would be great with grilled kielbasa chopped in it. Fridge wouldn't be needed. lol

  9. I'd think that it would end up too spicy.

  10. William,
You might be very right about that.
I'm going to try other ingredients.

  11. Echoing those prayers friend. We have been very hazy here from the fires in Canada. Your pepper relish looks absolutely wonderful. That is something I have never made. Must give it a try. Hugs!

  13. Your red pepper relish looks really good. That's great that you made it homemade. How wonderful it would be on a simple hot dog.

We had some rain this week. Tuesday night it was the loudest thunder I've ever heard before.

  15. Sheri,
    Glad y'all had some rain!
Thunderstorms are beautiful as long as they keep the lightening to themselves.

I bought hotdogs. Not my usual, but it is a special summer.

  16. Jeanie,
    You are so right.
After using up the peppers I bought, that is what I will do. :)
